Was the domain included as part of the acquisition? If so, then your in luck, there are several inexpensive ways to ensure mail flow continuity. If not, then I suggest you negotiate ownership of the domain as soon as possible. The domain, even if you do not plan on using it, will provide several layers of value.

Mailbox access after domain deletion
We have acquired a company who will be deleting their email domain( XXX@mathieu.company .ca) by Jan 2020. Is there any way to still access/forward emails that are sent to some of the company mailboxes after the domain is deleted?

Existing mailboxes will remain in place but if @mathieu.company .ca is moved from the mail servers or the MX details are changed then the mail will bounce back or be delivered elsewhere.
